(1) Note: The second section deals with cookery, which Markham holds to be ‘the first and most principall’ of all her skills, for she that is utterly ignorant therein may not by the laws of strict Justice challenge the freedome of Marriage, because indeed she can then but performe halfe her vow; for she may loue and obey, but shee cannot serue and keepe him with that true dutie which is euer expected. Although some of the recipes given here are plain and simple, such as that for seaman’s ‘loblolly’, a modern reader cannot but be struck with the vast and elaborate meals which the housewife was expected to prepare. When a gentleman was entertaining a few friends, no less than sixteen courses was the rule, with as many curiously designed and coloured dishes ‘for show,’ while a banquet for a prince is outlined which includes an extraordinary variety of roast and boiled meats, fish and owl of every kind. €600 - €800 170.
